Crab and Apple Salad

  • 1/2 shallot, minced fine
  • 2 TBL champagne vinegar
  • 1-1/2 TBL fresh lemon juice
  • 1 tsp lemon zest
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 pound crab meat
  • 3 TBL fresh chopped basil
  • 1/2 apple, shredded
  • 1 TBL finely grated fresh horseradish
  • Salt and pepper to taste
  • 1 TBL chives, minced
  • 1/2 Cup fresh arugula

1. In a medium bowl, whisk the shallots, champagne vinegar, lemon juice, and lemon zest together. Stir in the mayonnaise and sour cream until well blended.

2. Add the crab, basil, apple, horseradish, and most of the chives.  Stir in mayo/vinegar mix, and season with salt and pepper to taste.

3.  For garnish, toss a little fresh arugula with some light vinaigrette and mound this on top of the crab.  Sprinkle the remaining chives around the plate.

Serves 4.
